Before we plated a single crab cake or stirred a single house cocktail, we started with a simple truth: everything looks better with plants. A lot of plants. Like, wall-of-greenery, potted-palms-in-the-bathroom, vines-over-the-bar kind of plants. Evergreen was designed to feel lush, calming, and just a little wild—like a botanical garden with better lighting and bourbon.
